The Vintage Olive’s
“That’s Amazing!” Caesar Dressing
Seriously delicious, PACKED with flavor and no anchovies or egg yolks to bother with… Also fabulous as a dip or sauce!
⅓ cup Garlic Olive Oil*
¼ cup tahini (the somewhat secret ingredient)
2 Tbsp finely grated Parmesan cheese
2 Tbsp Sicilian Lemon Balsamic*
2 Tbsp water (to thin consistency)
1 (heaping) Tbsp capers, finely diced
2 tsp caper brine (liquid in the jar of capers)
2 tsp Worcestershire sauce
2 tsp whole grain mustard
½ tsp freshly ground black pepper
⅛ tsp salt (adjust to taste)
Add all ingredients (EXCEPT for the olive oil) to a bowl and gently whisk together. Once blended, whisk continuously while slowly drizzling in the olive oil until dressing is well blended/emulsified. Taste and add salt and pepper if desired. Enjoy!
Store in airtight container in refrigerator up to a week. Add a splash of water to thin consistency if needed. Yields appx 1 cup.
NOTES: Even easier; prepare this dressing using a mini blender. Simply add ALL the ingredients and pulse/blend together.
To make with a food processor, double the recipe and prepare as described.
