Classic Vinaigrette
Delicious with any of your favorite Olive Oil & Balsamic Vinegar combinations! See the Pairings page for

Ingredients:
3 parts Extra Virgin Olive Oil*
1-2 parts Balsamic Vinegar* (adjust for desired sweetness/sharpness)
Optional Extras: Pinch of high-quality salt and freshly-ground pepper. Spoonful of Dijon mustard, minced shallots, mayonnaise, fresh or dried herbs.
Directions: Pour the oil and balsamic in a container with a lid. Add a big pinch of salt, a few grinds of pepper and any other extras. Close lid and shake vigorously. (Alternately, use a food processor or briskly whisk together in a bowl)
Taste and adjust ingredients to preference. Stores in refrigerator for about 2 weeks. The vinaigrette will separate and slightly solidify. Simply set out to thaw a bit and shake to recombine. Enjoy!
