Grilled Lamb Chops with
Mushroom, Sage & Mint Marinade
12 lamb rib chops
¾ cup WILD MUSHROOM & SAGE OLIVE OIL*
½ cup LEMONGRASS MINT BALSAMIC*
4 cloves garlic, minced
2 tsp high quality Dijon mustard
1½ tsp ITALIAN HERBAL SEA SALT*
Place the lamb chops in a large re-sealable plastic bag. Combine olive oil, balsamic vinegar, garlic, mustard & salt. Whisk well, reserve small amount for drizzling later, then pour remaining marinade over lamb chops. Seal bag, removing as much air as possible. Gently toss to coat. Refrigerate at least 2 - 4 hours.
Preheat grill for medium-high heat. Remove the chops & place onto grill grates. Grill the lamb chops 4 to 5 minutes per side, or until cooked to desired doneness. (Baste with marinade from bag part way through cooking)
Drizzle with reserved marinade just before serving, salt to taste if desired. Enjoy!
