Olive Oil Roasted Okra
The trick here is in slicing the okra lengthwise & then roasting it
which does away with the “slime” that many people dislike.
Also, you can use any flavor of olive oil and
seasoning blend for endless variations!
INGREDIENTS:
1lb okra (Only tender pieces. If rinsed, ensure they’re completely dry)
1 tsp SEASONING BLEND* (more if desired, use your favorite!)
¼ - ⅓ cup of OLIVE OIL* (use your favorite!)
DIRECTIONS:
Preheat oven to 400° F. Trim off top and bottom tips of the okra. then slice lengthwise. In a large bowl, toss the okra, seasoning and olive oil together until well coated. Spread (cut side up) on a baking sheet and roast about 20 minutes or until crisp & browned. Serve immediately.
NOTES:
Some of our favorite olive oils for this are Tuscan Herb, Blood Orange, Garlic, Butter, Olive Wood Smoked, Lemon and Harissa.
You can also blend the oils; try using half/half Garlic olive oil and Toasted Sesame oil for crazy-good flavor!
