Roasted Tomatoes
Savory, healthy and so good!
12 plum tomatoes (or favorite variety) halved lengthwise, cores and seeds removed
4 Tbsp TUSCAN HERB OLIVE OIL* (also delicious with other flavored olive oils)
1 1/2 Tbsp TRADITIONAL DARK BALSAMIC* (also try with Lavender and more)
2 tsp sugar (optional)
1 to 2 tsp ITALIAN HERBAL SEA SALT* (adjust to taste)
1/2 tsp. freshly ground BLACK PEPPER*
Fresh Thyme, Rosemary, Basil or Oregano (optional)
Preheat the oven to 450°F.
Arrange the tomatoes on a sheet pan, cut sides up, in a single layer. Blend the olive oil and balsamic vinegar together and drizzle over tomatoes. Sprinkle the sugar, salt and pepper and herbs over the tomatoes. Roast for 25 to 30 minutes, until the tomatoes are concentrated and beginning to caramelize. Serve warm or at room temperature.
